Tabouli with Lentils and Feta

Two Fat Foodies, going for slim

Ingredients:

1 1/2 Cup Bulgur
1 Cup cooked lentils
2 cucumbers peeled, seeded and small diced
3 plum tomatoes seeded and small diced
1/2 cup parsley chopped
1/2 cup dill chopped
1/4 cup cilantro chopped
4 garlic cloves finely minced
1/3 cup olive oil
2 Tbsp lemon juice
1 tsp sea salt
1/2 tsp black pepper
1/2 Cup feta crumbled

First things first, as early as a day before to at least 2 hrs before you prepare salad measure out Bulger and add to a bowl then add 3 cups of bowling water, stir then leave to soak.
The wheat kernels will absorb water and plump up.

In another large bowl add your cucumbers

Choose bright red but firm to the touch plum tomatoes, cut in half length ways and deseed.

Small dice tomatoes and add to bowl. Next add garlic.

Using a salad shooter wash and spin your herbs…
