My post yesterday, Blueberry Picking: A Handful of Health, shared my experience with gathering fresh blueberries right from the field. Today my daughters and I got to enjoy the fruits of our labor! Since yesterday, my daughter was very certain about making blueberry pancakes for breakfast this morning and so we did.
It was quite simple. I am not big on whether a meal is from scratch or from bag or box. We purchase Krusteaz Buttermilk Complete Pancake Mix, 10 lb bag from Costco. You can also get this at Sam’s Club. It makes for a quick and easy breakfast. Below is what we did to end up with the most delicious pancakes this morning.
Ingredients:
Handful or more of fresh blueberries
Pancake mix of your choice, I used Krusteaz Buttermile Complete Pancake Mix that only requires you to add water
3 tbs of butter or margarine
1 tsp vanilla extract
Instructions:
- Rinse blueberris carefully in colander. Be sure all stems are off and only ripe blueberries are in the mix. Rinse thoroughly as we found baby caterpillars on some of our berries.
2. Follow pancake mix instructions. We used 1 1/2 cup pancake mix and added about 6 oz of water. Add vanilla extract. Use whisk to mix and then carefully fold in the blueberries. Be careful to not squish or put crushed blueberries in. Remember blueberries can be a natural food dye. You do not want ta bluish, pinkish pancake. You want whole blueberries.
3. Heat pan. Lightly grease with butter or margarine. Add pancake mix. Allow to cook 1-2 minutes on each size. Key is to flip once you notice the mix create small bubbles.
4. Stack, add fresh blueberries as a topping, and drizzle with syrup! Enjoy!
