This was a delicious dish that I was able to create in no time. I worked all day seeing clients back to back, then got off and attended my bike meeting for BreakawayRVA, and then joined in at a networking event until 9:00pm. Yes, I was tired. I was drained, but my family still needed to eat.

Cod fish is very delicate and cooks in 12-15 minutes. I already had it defrosting while I was gone so I just seasoned it and then tossed it in the preheated oven. I called my fiancé on the way home and was like, “Hey turn the oven on!” I guess you could call this team work, lol. Anyhoo, I immediately had the sides going while the fish was baking so everything could come together all at once.
When I am feeling the taste for indian inspired dishes, but do not want to recreate the wheel I use Patak’s Simmer Sauces. These create easy steps to delicious Indian flavor.

Ingredients:
2 lbs of Cod Fish (about 4 pieces)
1 Jar of Pattaks Tikka Masala Curry
Non-stick cooking spray
I cup rice, follow package instructions
1 bunch of Kale, follow instructions from My “sidekick” is called KALE!
Seasonings: Salt and Pepper, to taste; adobe seasoning, onion powder, garlic powder.
Instructions:
- Preheat oven to 350. Season cod fish generously. Spray baking dish with non-stick cooking spray.
- Bake for 15 minutes. At 10 minutes, add tikka masala sauce and allow to cook the remaining 5 minutes.
- Remove from heat. Serve over white rice and add your side of Kale.
- Wah-lah. Enjoy!
