Baked Vegetable Medley Casserole

This was a nice {Quick} and {Easy} recipe that is perfect for a mom to create after a long day of work or for a busy body who needs a meal that they can have last for an additional day or two.


1 bag of vegetable medley (cauliflower. Carrots, broccoli, snap peas, etc.) fresh or frozen
1 cup of sour cream
1 10 oz can of condensed cream of mushroom
1 2 cup bag of Colby Jack cheese
1 box of Ritz whole grain crackers or Multigrain Club crackers
1/2 cup melted butter
Salt & Pepper


1. Thaw & Drain vegetable medley


2. Mix in sour cream, cream of mushroom, cheese, and seasoning.


3. Spread vegetable mixture into casserole dish. Crush crackers and mix with additional cheese. Add as top layer to vegetable mixture. Pour melted butter evenly on top.


4. Bake 30 minutes covered. Enjoy!
