Have you missed me? I know it’s been a while, but I have a great reason. I started my own private practice and have been super busy building instead of blogging. I’ve felt bad and due to popular demand I made it a point to post some recent meals for you all!
Due to a busy schedule I definitely have had to be creative and rely on quick and easy meals. Working and motherhood is no joke! But motherhood comes first so we have to keep the hot meals coming. I told them they can’t live off Chick-fil-A! They would if they could. No chicken in this house though!
So here’s to the recipe that I’ve decided is my new fave. I was juggling a two year old in hand while cooking so no pics with the steps for this one.
Ingredients:
2 tbs vegetable oil
1 red pepper, diced
1 green pepper, diced
1 can diced tomatoes with chiles
1 package meatless veggie crumbles
1 package New Orleans-style ready to serve Jambalaya rice Family Size
Instructions:
1. Heat oil in large skillet over medium heat. Add bell peppers. Sauté until tender.
2. In separate pot, follow package instructions for the Jambalaya rice, but add in the veggie crumbles so they can cook together.
3. Add bell peppers and tomatoes to the pot with the cooked veggie crumbles and rice. Stir and season well.
4. Enjoy!
